Sweet Chilli Prawns

Why not rustle up a delicious Bannisters Baked Jacket Potato with juicy prawns in a sweet chilli sauce. A summery, zesty and versatile dish that could equally be served to a bunch of friends after work, or as part of a quick and tasty tea home alone, served with a chilled glass of crisp Pinot Grigio.

6 Bannisters Yorkshire Family Farm Baked Jacket Potatoes

300g Cooked king prawns

1 Red chilli, washed and finely chopped

Fresh coriander (medium handful), washed and chopped

2 Limes

2 tbsp Rice vinegar

2 tbsp Sweet chilli dipping sauce

1 Clove of garlic, peeled and halved

1 tbsp Olive oil


Put the prawns in a bowl with the chilli, coriander leaves, the juice and zest of 1 lime, the sweet chilli sauce, olive oil and rice vinegar.

Finely slice the garlic clove, stir in and leave the mixture to marinate for 5-10 mins.

Cut the remaining lime into 6 wedges.

Cook the Bannisters Baked Jacket Potatoes as per instructions.

Finally, spoon the sweet chilli prawn mixture on top of the Bannisters Baked Jacket Potatoes and serve with the wedges of lime.
