Goats Cheese may be the marmite of cheeses for some, but here are Bannisters HQ we’re more than just a little partial to local goats cheese crumbled on top of our Baked Potatoes.

Ingredients

4 Bannisters Yorkshire Family Farm Baked Jacket Potatoes

120g crumbly goats cheese

Fresh spinach (medium handful)

150g streaky bacon (optional)

300g cherry tomatoes

Olive oil

Method

Cook the Bannisters Baked Jacket Potatoes (as per instructions).

Fry the streaky bacon until crispy, then remove the bacon from the pan, set aside and break into small pieces.

In the frying pan, fry the cherry tomatoes with the olive oil until they have started to soften.

Then add the fresh spinach and cook until the spinach has wilted.

Take the frying pan off the heat, add half of the goats cheese and mix together.

Open up the cooked potatoes and load each one with the tomato and goats cheese mixture and bacon pieces.

Serve with the remaining goats cheese sprinkled on top.
