A great recipe when you want something that’s nicely filling, but lovely and light.

Skinny slaw

Ingredients

  • 4 Baked Jacket Potatoes (or Naked ones)
  • a mixture of red and white cabbage
  • 2 carrots
  • 1 apple
  • 2 spring onions
  • natural yoghurt
  • 1 lemon
  • a small handful of parsley

Method

Thinly shred all the vegetables and stir through a few tablespoons of yoghurt to coat them.

Add a squeeze of lemon juice and a good grind of black pepper, a sprinkling of chopped parsley and you’re good to go.
