Let’s travel away together! For this recipe, we’re going Greek…a speedy, filling and especially tasty way to eat a salad!

4 Bannisters Yorkshire Family Farm Baked Jacket Potato

100g feta cheese

60g black olives

75g sundried tomatoes

100g cherry tomatoes, quartered

100g cucumber, cut into chunks

½ red onion, cut into chunks

1 tsp dried oregano

Fresh thyme (sprigs)

1 tbsp olive oil


Cook the Bannisters Baked Jacket Potatoes as per instructions

Meanwhile, mix the chopped cucumber, cherry tomatoes, red onion, black olives, sundried tomatoes, half of the feta cheese and dried oregano together with the olive oil.

Top the cooked Bannisters Baked Potatoes with the delicious Greek salad mixture.

Serve with the remaining crumbled feta and fresh thyme.
