A tasty brie and bacon melt on little baked potatoes – a fabulously filling and festive feast for friends and family.

Leftover Brie

150g streaky (or any other) bacon

1 small, finely sliced onion

1 tbsp olive oil

Bannisters Yorkshire Family Farm 6 Little Jacket Potatoes


Cook the streaky bacon until crispy.  Cook the Bannisters Baked Potato (only 3  mins) as per instructions.

Fry the sliced onions until caramelised.  Set out the cooked potatoes on a baking tray.  Break up the bacon into medium sized pieces.

Open up each potato, and load each one with fried onions, pieces of streaky bacon and chunks of brie.  Drizzle with a tiny bit of olive oil.

Pop the baking tray in the oven and bake for a few minutes until the brie has melted.  Enjoy!
