Potato skins with cheese & bacon

A true classic – and guaranteed to go down a storm.

Potato skins with cheese & bacon


  • 1 packet of Bannisters Potato Skins
  • 250g of grated Red Leicester (Cheddar or a mixture of cheese will work just as well)
  • 1 red onion, finely diced
  • 4-5 spring onions, finely sliced
  • 8 rashers of bacon
  • 2-3 tablespoons of mayonnaise


Heat your oven to 180 degrees.

Place the rashers of bacon on a baking sheet and cook for 15 minutes until nicely crisp, then cut them into small pieces.

Next, place the potato skins in the oven on a separate baking sheet for 15 minutes.

Whilst the skins are in the oven, mix the grated cheese, red onion, spring onion, bacon and mayonnaise in a bowl until evenly combined.

Remove the potato skins from the oven and fill with the cheese and bacon mix. Turning the oven up to 200 degrees, put them back in the oven for a further 15-20 minutes until nicely melted and golden on top.
