You can whip this up in minutes, or make it all in advance if you fancy getting ahead. Packed with fresh veg, it’s really healthy and makes a great weekday lunch.

Satisfying superfood salad

Ingredients

  • 4 Baked Jacket Potatoes
  • 250g cooked baby beetroot
  • 100g almonds, lightly toasted in the oven
  • 100g baby spinach
  • 1 head of broccoli – cut, cooked and cooled
  • 1 small punnet of blueberries

Dressing Ingredients

  • 2 tbsp pomegranate juice
  • 100g pomegranate seeds (optional)
  • 1 tbsp runny honey
  • 1 tbsp fruity vinegar (we use raspberry)
  • 4 tbsp rapeseed oil

Method

Whisk all the dressing ingredients together, pour over the salad ingredients and give it all a good toss to mix. Serve it alongside a piping hot potato, and you’ve got a seriously easy, healthy plateful.
