Superfood sweet potato skins

Loaded with nutrients, super colourful and incredibly delicious.

Superfood sweet potato skins


  • 8 Bannisters Sweet Potato Skins
  • 1 300g pack of steamed beetroot
  • ½ red chilli
  • chopped walnuts
  • chopped coriander
  • sea salt
  • extra virgin olive oil

Turn on the oven and heat to 200 degrees.

Put the sweet potato skins on a tray and bake for 30 minutes.

While they’re baking, dice the beetroot into 1cm cubes. Next, deseed and finely slice the red chilli.

Roughly chop a handful of walnuts and chopped coriander.

Mix all the ingredients together in a bowl, add a pinch of sea salt and drizzle with extra virgin olive oil.

Once the sweet potato skins are ready, spoon over the beetroot topping and serve with an extra sprinkling of fresh coriander.

If you like, diced feta also adds a delicious saltiness to this dish. Sprinkle over the top before serving.
