Beef & bean chilli with baked sweet potatoes

This is proper comfort food, packed with flavour and absolutely delicious.

Ingredients

  • 1 red onion, finely chopped
  • 1 clove of garlic, crushed
  • 1 red chilli, deseeded and finely chopped
  • 1 red pepper, chopped
  • 1 tin of kidney beans, rinsed and drained
  • 1 tin of haricot beans, rinsed and drained
  • 500g of minced beef (vegetarian mince can be used as a veggie alternative)
  • 1 jar of chilli con carne
  • 6 Bannisters Baked Sweet Potatoes
  • soured cream (optional)
  • fresh coriander (optional)

Method

Heat the oven to 200 degress, then place the sweet potatoes on a baking sheet and cook for 30-35 minutes.

While the sweet potatoes are baking, heat a little oil in a pan, add the onion and garlic then cook until softened. Add the mince and cook until browned, stirring so it doesn’t stick.

Next add the diced pepper, chopped chilli, kidney and haricot beans then stir. Finally, add the jar of chilli con carne, stir and simmer for a good 20 minutes.

Take the baked sweet potatoes out of the oven and serve with a big helping of chilli. You can always add a dollop of sour cream and a sprinkle of fresh coriander if you fancy!
